
Make Cavatelli with the Cutrone Family, November 9
CONVIVIO COOKERY: CAVATELLI with the Cutrone Family on Sunday, November 9, 2025, from 11 AM to about 1 PM. Tuition: $85.
Who doesn't love a bowl of cavatelli? This traditional semolina pasta is famous throughout Italy, but it is thought to have originated in Apulia in the South: the ancestral homeland of all my grandparents.
Together as a class, we will each make our own dough, by hand. My mother, my sister, and I will teach you how: It's easier than you think, and this is the way I watched my grandma make pasta (never with a mixer!). Once we've all made our dough and let it rest a bit, we will teach you how to roll your dough and then... well! Then we will indeed break out la machina (a machine)! We will be using delightful hand-cranked machines that will turn our ropes of dough into beautiful individually cut cavatelli.
The batch you make is the batch you will take home. And that evening, you can serve your homemade cavatelli with a light marinara sauce or with broccoli rabe (rappini). We'll send you home with our traditional family recipes for both these things, plus a recipe, of course, for cavatelli, so you can make this specialty at home whenever you like. This is simple, hearty peasant fare at its best.
Each participant will work at their own individual board around our communal table and while we work, we can share stories and gossip, too... which is just what my family does when we make cavatelli at home. Perhaps we can each have un bicchierino di vino, as well, to help pass the time.

Instructor John Cutrone is a writer and co-proprietor of Convivio Bookworks. He is the author of the Convivio Book of Days, a literary lifestyle blog encouraging us to live the ceremony of each day. His sister, Marietta, and his mother, Millie, will be assisting in this workshop. All three are good cooks! You'll get the authentic Italian family kitchen experience, and later that day, a delicious meal that you yourself made from scratch.
