Mambricoli is a traditional semolina pasta from Apulia in Southern Italy, and quite specific to Lucera and \u003cem\u003ela provincia di Foggia\u003c\/em\u003e, the Province of Foggia, which is the ancestral homeland of my maternal grandparents. This pasta requires four simple ingredients: semolina, eggs, grated cheese, and parsley.\u003c\/p\u003e\n\u003cp\u003eTogether as a class, we will each make our own dough and we will each shape our own mambricoli: so, the batch you make is the batch you will take home. And that evening, you can serve your homemade mambricoli in \u003cem\u003ebrodo\u003c\/em\u003e (broth) or \u003cem\u003ezuppa di pollo\u003c\/em\u003e (chicken soup) or with a light marinara sauce. We'll send you home with our traditional family recipes for all these things, plus a recipe, of course, for mambricoli, so you can make this specialty at home whenever you like. This is simple, hearty peasant fare at its best.\u003c\/p\u003e\n\u003cp\u003eEach participant will work at their own individual board around our communal table and while we work, we can share stories and gossip, too... which is just what my family does when we make mambricoli at home.
