CONVIVIO COOKERY: RICOTTA GNOCCHI with the Cutrone Family on Saturday, August 15, 2026, from 11 AM to 2 PM. Tuition: $95 (includes your own Italian Gnocchi & Garganelli Board).

Several years ago, our cousin Maria shared with us a recipe for a lighter gnocchi: this one ditches the traditional potato and uses instead fresh ricotta in the dough. The result is a much lighter gnocchi that is, we think, even more delicious and satisfying than potato gnocchi. The dough is a joy to work with, too.

Together as a class, we will each make our own dough and we will each shape our own gnocchi: so, the batch you make is the batch you will take home. And that evening, you can serve your homemade gnocchi with a light marinara or with any sauce you have on hand. We'll send you home with our family recipe for a quick and easy marinara, plus the recipe for the gnocchi, of course, so you can make this specialty at home whenever you like. We will also send you home with your own beechwood Gnocchi & Garganelli Board, imported from Italy. The board is part of the gnocchi-making process, giving this pasta its distinct shape and imprinted lines, which hold sauce so beautifully.

Each participant will work at their own individual board around our communal table and while we work, we can share stories and gossip, too... which is just what my family does when we make gnocchi at home. We'll serve some light savory treats with un bicchierino di vino, as well, to help pass the time.

Instructor John Cutrone is a writer and co-proprietor of Convivio Bookworks. He is the author of the Convivio Book of Days, a literary lifestyle blog encouraging us to live the ceremony of each day. His sister, Marietta, and his mother, Millie, will be assisting in this workshop. All three are good cooks! You'll get the authentic Italian family kitchen experience, and later that day, a delicious meal that you yourself made from scratch.
